Sweet Heat Jam
1 can frozen apple juice concentrate
1 pound jalapeño peppers
1 1.75-ounce package powdered pectin
7 cups white cane sugar
Before starting the jam, boil the jars and lids in a large saucepan so when you fill them they won’t break from the heat of the jam. Place the frozen apple juice in a large saucepan and bring it to a boil. Then blend the jalapeños in an electric blender and add to the apple juice. Slowly add in the pectin while bringing back to a boil and continuously stirring so that it does not burn. When it boils, add the sugar slowly and bring back to a boil for 1 minute, then fill your (already hot) jars. After filling the jars, turn them upside down for 5 minutes and then back upright. This will seal the jars. This recipe will fill 8 eight-ounce mason jars.
