My family and I had a wonderful time on our visit there. We walked the hilly streets and ate breakfast at Chez Maman. I highly recommend it.

A recipe for Pasta Carbonara
Ingredients:
Salt and pepper to taste
1/4 c. extra-virgin olive oil
1/4 pound of pancetta, chopped
1 tsp. crushed red pepper flakes (optional)
5 garlic cloves, chopped
1/2 c. dry white wine (optional)
2 large egg yolks
1/2 c. grated Romano cheese
Put a large pot of water to boil. Add salt and rigatoni, cook about 8 minutes (al dente.)
Heat a large skillet over medium heat. Add olive oil and pancetta. Brown for 2 minutes. Add red pepper flakes and garlic, cook 2-3 minutes longer. Add wine and stir.
Beat yolks, and temper them by adding some of the water from the pot boiling the pasta. Drain pasta and add to the skillet with pancetta and oil. Pour egg mixture over pasta. Toss to coat quickly, without cooking the egg mixture. Remove from heat and add a handful of cheese. Toss until egg mix thickens, about 1-2 minutes.
